The structure of gluten consists of two main protein components, gliadin and glutenin, which are insoluble in water. Gliadin is referred to as Prolamin and serves as the energy store of plants. One of the peptide groups forming prolamins (contains 33 amino acids) is slightly different from the other groups and contains a high amount of Proline amino acid.
